Shelf Reliance Potato and Spelt Cakes

Potato and Spelt Cakes

Makes 12 cakes
Potato & Spelt Cakes
¼c. THRIVE™ Chopped Onions
2tbsp. garlic, minced
¾c. THRIVE™ Mushroom Pieces (FD)
2tbsp. basil and parsley, equal parts
½c. water
1tbsp. butter
½c. THRIVE™ Spelt, cooked
¾c. parmesan cheese
2c. mashed potatoes (from 1 c.THRIVE™ Potato Beads)
2c. bread crumbs
Place the onions, garlic, mushrooms, herbs, water, and butter in a small skillet and bring to a simmer, stirring frequently. Reduce until mostly dry. Prepare potato beads as mashed potatoes, following directions on can. Add mushroom mixture, cooked spelt, and cheese and fold together. Form into small flat patties and coat with bread crumbs. Fry in a pan with olive oil and butter until browned.
