 Creamy Smooth Asparagus Soup

IngredientsInstructions
tbsp. garlic
1tbsp. olive oil
4c. THRIVE™ Asparagus (FD)
¾c. THRIVE™ Chopped Onions (FD)
1c. THRIVE™ Celery (FD)
4c. water
1tbsp. THRIVE™ Chicken Bouillon
1tbsp. Italian seasoning
tsp. THRIVE™ Iodized Salt
¼tsp. pepper
¼tsp. rice wine vinegar
2c. heavy cream
In a 3-quart saucepan, sweat garlic and olive oil together. Add vegetables and stir. Add water and bouillon and stir well. Add all seasonings, cover with a lid, and simmer for about 10 minutes. Pour soup into a blender and blend until smooth. Pour back into pot, add cream, and bring to a simmer for an additional 5 minutes. Makes 8 servings.

Serving Idea: Serve with crispy bacon and reconstituted THRIVE Asparagus and Red Bell Peppers placed at the center of each bowl of soup.

Savory Chopped Chicken Sandwich

A few weeks ago I was introduced to a line of spices and mixes called Country Gourmet Home and man are they good!  I used half a package of their Pulled Pork Seasoning and mixed it with 1 1/2 cups of THRIVE freeze dried chicken.  The result was a quick dinner with an incredible flavor.

I warmed up my chicken in a small crock pot for about 45 minutes

Shelf Reliance Chopped Chicken


Ingredients
1 1/2 Cups THRIVE Freeze Dried Chopped Chicken
1/2 Package Country Gourmet Home Pulled Pork Seasoning
1 1/4 Cups Water

Combine all ingredients in a small pot or crock pot and cook on medium low heat for 30-45 minutes.  Drain excess water.  Serve as a toasted sandwich, over rice or just by itself!

c. THRIVE™ White Flour
1c. THRIVE™ Quick Oats
¾c. THRIVE™ Honey Crystals, dry
2tsp. THRIVE™ Baking Powder
1tsp. THRIVE™ Baking Soda
½tsp. THRIVE™ Iodized Salt
2THRIVE™ Whole Eggs (2 tbsp. powder + 4 tbsp. water)
¾c. THRIVE™ Instant Milk, reconstituted
¼c. butter, melted
1tsp. vanilla extract
2c. THRIVE™ Bananas, reconstituted & pureed
Streusel Topping:
3tbsp. THRIVE™ Quick Oats
¼c. THRIVE™ Honey Crystals, dry
¼c. THRIVE™ White Flour
¼c. cold butter, cubed
2tbsp. THRIVE™ Brown Sugar
½tsp. cinnamon
Combine all dry muffin ingredients in a bowl and stir to combine. Add the wet ingredients and blend together until just incorporated. Scoop into a 12-muffin tin with 12 paper liners. Mix all struesel ingredients together and cut with dough cutter. Sprinkle even portions on top of the muffins.
Bake in oven at 400 degrees for 15-20 minutes.

Hot & Sour Soup

Serves 4

Hot and Sour Soup Video
IngredientsInstructions
1tbsp. garlic
1tsp. sesame oil
¼tsp. cayenne pepper
2tbsp. soy sauce
2tbsp. THRIVE™ Chopped Onions (FD)
3tbsp. rice wine vinegar
1tbsp. ketchup
tbsp. THRIVE™ Beef Bouillon
4c. water
3tbsp. corn starch
¼c. THRIVE™ Green Onions (FD)
In a 2-quart saucepan, sweat garlic and sesame oil. Add cayenne, soy sauce, chopped onions, vinegar, and ketchup, stirring between each addition. Add bouillon and water and bring to a boil for 1 minute. Mix 5 tbsp. cold water into cornstarch to create a slurry and add it to boiling soup. Bring back to a simmer for 3–4 minutes and strain soup through a fine strainer. Add green onions and allow to rest for 5 minutes before serving. Makes 4 servings.
Bake in oven at 400 degrees for 15-20 minutes.

Shelf Reliance Cheeseburger Casserole

This casserole has quickly become a standard dinner that I serve on week nights.  It is quick and simple to make and can be made with 100% food storage ingredients.  Sometimes I will bake them in mini single serving dishes.  This makes it easy to have leftover portions ready to pop back in the oven.

THRIVE casserole

Ingredients
1 1/2 Cups THRIVE Potato Chunks
4 Cups Water
1/2 Cup THRIVE Cheese Blend
2 Tbs THRIVE Freeze Dried Onion
1/2 Cup THRIVE Freeze Dried Celery
1/4 Cup THRIVE Sour Cream Powder (mixed with 1/2 cup water)
1 Cup THRIVE Freeze Dried Ground Beef
1 Tbs Italian Seasoning


Preheat oven to 325 and grease an 8" x 4" loaf pan.  Combine first five ingredients in a large sauce pan and bring to a boil.  Boil for 15 minutes on medium high heat or until potatoes are tender.  Meanwhile rehydrate ground beef with  Italian seasoning and drain.  Once the potato mixture is done, strain the excess water. In a large mixing bowl combine potatoes, ground beef and sour cream. Top with optional shredded cheese and bake for 10-15 minutes.

Shelf Reliance Potato Cakes

The other night I made some of our Potato Beads for dinner as a side dish.  We had a little bit leftover and decided to try making potato cakes with them.  I almost wish we hadn't made them because they are so delicious but I know they aren't great for my diet!!  Now every time I make potato beads I will probably subconsciously make too much!

To make these tasty cakes all you have to do is take some reconstituted potato beads and pat them into cakes.  Heat up a little...(or a lot) of butter and fry them in the skillet flipping a few times until they get browned and crispy.
