Shelf Reliance Crock Pot Macaroni and Cheese

This weekend I started talking about dishes that we could make using all THRIVE ingredients.  We thought that crock pot mac and cheese would be great so I gave it a try last night.  I used 100% Shelf Reliance ingredients and it tasted just like her recipe.  It is not a low calorie dish, but oh my is it GOOD!

Ingredients
2 Cups Shelf Reliance Elbow Macaroni
1 1/2 Cup Evaporated Milk (3T + 4 1/2t Shelf Reliance Powdered Milk + 1 1/2 Cup Water)
1 1/4 Cup Milk (3T plus 2 1/4 t  Shelf Reliance Powdered Milk + 1 1/4 Cup Water)
1/4 Cup Butter (1/4 Cup Shelf Reliance Butter Powder + 1/4 Cup Water)
2 Eggs (4T Shelf Reliance Scrambled Eggs +  6T Water)
2 1/2 Cup Shelf Reliance Freeze Dried Shredded Cheddar Cheese*
1/2 Cup Shelf Reliance Freeze Dried Monterey Jack Cheese*

Boil macaroni in a large pot over medium high heat for 10 minutes.  Remove from stove and drain noodles.  Place noodles in a preheated crock pot. Mix in butter mixture and egg mixture.  Stir in cheese and milk.  Salt and pepper to taste.  Cook on low for 3 hours.

When I made my mac and cheese I mixed each of the dry ingredients separately.  In theory you should be able to mix all of the dry ingredients in one large bowl and add to the cooked macaroni.

CHEESE RECONSTITUTION RECIPE

Ingredients
2 cups THRIVE Shredded Colby Cheese (FD)
½ cup cold water
Directions
1. Place the THRIVE cheese in a glass bowl.
2. With a spoon, lightly stir cheese while drizzling cold water over the cheese. Stir continuously until all the water is incorporated into the cheese.
3. Water should just barely start to collect on the bottom of the glass bowl. This is a sign that the cheese has absorbed enough water.
4. Place cheese in a zip lock bag and store in refrigerator overnight or for several hours before use.
Note: Cheese will last up to 8 days in refrigerator. Continue to reconstitute cheese, as you need it, following these simple steps. Adjust quantity for individual needs.

Shelf Reliance French Dip Sandwich

I tend to get in a rut sometimes and eat the same things week to week.  Last night I decided to change it up a little and try out a can of freeze dried roast beef that I have had sitting in the pantry for weeks.

This made a great dinner and took only minutes to make.  I love the fact that I can have meats and cheeses available in my pantry at any time and I don't have to worry about refrigerating them or having to use them before they go bad.  The roast beef has a shelf life of 25 years unopened and 1 year after opening.  The cheese has a shelf life of 20 years unopened and 2 years after opening!  You cant get any better than that.

Recipe makes two sandwiches:
4 Slices of white bread toasted
1/2 Cup Shelf Reliance THRIVE Freeze Dried Roast Beef
1/4 Cup Shelf Reliance THRIVE Freeze Dried Monterey Jack Cheese
1/4 Cup Shelf Reliance THRIVE Freeze Dried Mozzarella Cheese
1 Can Condensed Beef Broth + 1 Can Water (You could also use French Onion Soup)

Layer re-hydrated roast beef over two slices of toasted bread on a baking dish.  Top with re-hydrated cheese and broil on low until cheese is melted and just starting to brown.  While sandwiches are cooking microwave soup for 1 1/2 minutes and pour into a small bowl or ramekin.  Top sandwiches with toast and serve with dipping sauce or enjoy them as an open faced sandwich.

Shelf Reliance Creamy Corn Casserole

Carolina Food Storage Creamy Corn Casserole

If you have looked at any of my posts you will realize that I love a good casserole 
recipe.  I am always looking for good meals that I can throw in the oven and
forget about until dinner is ready.  This casserole has a nice rich taste that
goes great with grilled chicken or even a burger.



Ingredients:
3 Cup THRIVE Freeze Dried Sweet Corn
4 Tbs THRIVE Red & Green Bell Peppers
2 Tbs THRIVE Freeze Dried Chopped Onion
1/4 Cup THRIVE Instant Milk*
8 oz Cream Cheese Softened
1 Can Cream of Celery Soup (10.75 oz can)
*Rehydrated

Preheat oven to 375 degrees. Combine corn, peppers and onions in a large mixing bowl and cover with warm water for 15 minutes. Once corn, onion and peppers are re-hydrated drain them, squeezing out any excess water.  Combine with soup and cream cheese.  Pour into a greased 9" baking dish and cook for 45-50 minutes.

Prepare a little....save a lot!

MSN posted a great article about being prepared and keeping some of your hard earned money in your wallet and not at the grocery store.  THRIVE foods are a great way to build your own home store with great tasting long lasting foods that your family will love.

It isn't just corn, though. Wheat and soybeans are looking dismal, fruits and vegetables are wilting, and the meat and dairy industries face heat-related issues.

The bad news: Your food budget is going to take a hit. The good news? A few simple steps can noticeably reduce the impact. When you see good prices, buy as much as your freezer can hold. Use a lot of canned meats or chicken or beef broth? Watch for deals on those products, too. Meat prices are expected to increase as much as 4.5%.

Storing the goods
Watch for deals on canned, dried and frozen foods, too, Nelson advises. Many of the products currently on supermarket shelves are from the 2011 harvest, which is cheaper than the 2012 one will be.

Don't have much storage space? Focus on the foods you eat most often. If your household goes through a couple of pounds of pasta per month, stocking up might save you only a dollar or two. But how many boxes of cereal do you buy each week?

Super Quick Nachos

 It can't get much easier to make a meal than this.  Take a few tortilla chips, some salsa, olives, cheese and freeze dried sausage and in minutes you have dinner!  I love my Shelf Reliance freeze dried sausage crumbles.  Most of the time I will use them in a dish straight out of the can without re-hydrating.  This is just one of the many ways that I use my sausage crumbles.  They are great in casseroles, omelets, biscuit toppings and of course by themselves as a tasty, although not slimming, treat!
