Super Easy Peach Cobbler

This afternoon my Mother In-Law stopped by our house on her way back from a trip.  She brought us a few peaches from a local farm, Black's Peaches.  My Husband mentioned that he would love to have a cobbler and my answer to that was "I don't know how to make a cobbler".  His Mom gave me this quick recipe and it turned out great!  I never would have guessed that something this good was so easy to make!

Ingredients:
2 Large Ripe Peaches - Peeled and Sliced
* Reconstituted 

Place a greased 9 x 9 baking dish in the oven and preheat to 350 degrees.  Combine flour, baking powder and salt with a whisk.  Once blended mix in sugar and milk.  Pour butter mixture into the bottom of your dish then pour the flour mixture over top.  Place peach slices into the batter and bake for 30 minutes or until golden brown.

CHEESE RECONSTITUTION RECIPE
Todd C. Leonard, CEC | Serves: 8 | Prep Time: 4 min
Ingredients
2 cups THRIVE Shredded Colby Cheese (FD)
½ cup cold water
Directions
1. Place the THRIVE cheese in a glass bowl.
2. With a spoon, lightly stir cheese while drizzling cold water over the cheese. Stir continuously until all the water is incorporated into the cheese.
3. Water should just barely start to collect on the bottom of the glass bowl. This is a sign that the cheese has absorbed enough water.
4. Place cheese in a zip lock bag and store in refrigerator overnight or for several hours before use.
Note: Cheese will last up to 8 days in refrigerator. Continue to reconstitute cheese, as you need it, following these simple steps. Adjust quantity for individual needs.

Make Ahead Sausage Dumplings

Lately it has been so hot that by the time I get home from work and tend to the garden and the animals the last thing on my mind is cooking.  I seem to search the internet and pinterest for recipes and then end up eating a sandwich.  How terrible is that!?!  So anyway, I just came across this recipe from Southern Living and thought that my THRIVE Freeze Dried Sausage Crumbles would be great to use instead of the ground pork loin.  I am definitely going to try this out!


Ingredients

  • 1 1/2 pounds lean boneless pork loin chops, cut into chunks
  •  (or substitute THRIVE Freeze Dried Sausage Crumbles)
  • (12-ounce) package 50%-less-fat ground pork sausage 
  • 1 1/2 teaspoons salt
  • 15 water chestnuts, finely chopped
  • to 2 tablespoons minced fresh ginger
  • 1/2 cup cornstarch
  • 2 teaspoons lite soy sauce
  • 1/2 cup fat-free reduced-sodium chicken broth
  • 4 tablespoons sugar 
  • 1 teaspoon teriyaki sauce
  • 1 teaspoon sesame oil
  • 1/4 cup chopped fresh parsley
  • green onions, diced $
  • (16-ounce) packages wonton skins
  • Oyster sauce (optional)
  • Thai chili sauce (optional)
  • Ginger Dipping Sauce (optional)

Preparation

  1. Process pork loin in a food processor until finely chopped.
  2. Combine pork loin, pork sausage, and next 11 ingredients.
  3. Cut corners from wonton skins to form circles. Drop 1 teaspoon mixture onto middle of each skin. Gather up skin sides, letting dough pleat naturally. Lightly squeeze the middle while tapping the bottom on a flat surface so it will stand upright.
  4. Arrange dumplings in a bamboo steam basket over boiling water. Cover and steam 20 to 25 minutes. Serve with sauces, if desired.
  5. Note: To freeze, arrange dumplings on a baking sheet; freeze for 2 hours. Place in zip-top freezer bags; label and freeze for up to 3 mounths. To cook dumplings from frozen state, steam for 22 to 25 minutes.

What about your four-legged family?  There are numerous websites that provide helpful lists of what should be in your pet’s emergency kit, but as a dog trainer, I would like to discuss some additional considerations in preparing your dog for the emergency as well as some suggestions about the items your choose for your kit. 
Here is what is in my kit, which is assembled in a gym bag and ready to go. 

3 Day Supply of Emergency Pet Food:
Most people think they will just grab some of their pet’s food as they go out the door, but in an emergency situation, will you have time to do that?  Will your food travel well? Grabbing what is left in a 30 pound bag of dog food may not be convenient or practical.  I keep freeze dried beef in my kit.  The brand I use has 5 patties in a bag and weighs under a pound.  This is actually enough to feed my dog for 5 days.  For my cat, I keep freeze dried salmon, which comes in a container that weighs less than 2 ounces and can feed my cat for about three days. 

It’s a good idea to introduce your emergency food to your pet BEFORE an emergency.  I suggest using the freeze dried products every week or so as a treat.  This will alert you to any food allergies and gets your pets accustomed to the food.  Additionally, doing so will enable you to rotate the supply in your disaster kit so that you always have fresh food in the kit.

Zucchini and Bacon Mini Quiches

Let me start off with a warning....these things are super addictive.  If you are planning to make these before you are ready to serve them, be sure to make extra!  I hope that i am not boring everyone with all of these zucchini recipes.  Our garden this year is producing a 5 gallon bucket a day. I can't seem to keep up so I am putting zucchini in everything!





Ingredients:
2/3rds Cup Shredded Zucchini
3-4 THRIVE Scrambled Eggs* (depending on the size of your muffin tins)
1/8 Cup Shredded Cheddar Cheese or THRIVE Shredded Cheddar Cheese*
3 Slices of Bacon Cooked & Crumbled or THRIVE Bacon TVP*

Preheat oven to 350 degrees and grease 12 mini muffin tins.  Saute zucchini over medium heat until browned.  Remove from heat and layer on a paper towel to remove excess moisture.  Fill the bottom of each tin with a layer of zucchini, cheese, bacon and eggs.  Fill tins 3/4 full.  Bake uncovered for 40-45 minutes or until eggs are set.

Food Storage Recipe: Squash and Beef Casserole

This little casserole recipe is so easy and is made from 100% food storage ingredients and veggies from our garden.  I have to admit that I love a great casserole.  Even with the extreme heat we have had I still want a nice hot meal for dinner.  The time and effort that it takes to make this casserole are minimal.  I was also able to use the leftovers in my meal the next day.  We combined the casserole with a little instant rice and dinner was done!

I started off by washing and slicing my squash and zucchini into 1/4" slices.

I then tossed them in olive oil until they were evenly coated and layered them into a greased 9" x 11" glass dish. I topped the veggies with a little seasoning (Paula Deen's House Seasoning)  If you have not tried this seasoning you need to give it a go.  We love using this seasoning and mixing it up in a shaker makes it easy to spice up a large dish or a small meal for one.

After baking the veggies layer them with ground beef, tomato sauce and mozzarella cheese.  So delicious.

Ingredients:
6 Cups Squash & Zucchini Cut Into 1/4" Slices
1 1/4 Cups THRIVE Freeze Dried Ground Beef *
THRIVE Spaghetti Sauce
1 Cup THRIVE Freeze Dried Mozzarella Cheese *
3 Tbs Olive Oil
House Seasoning To Taste

Preheat oven to 350 degrees.  Toss squash and zucchini with olive oil and layer in a greased 9" x 11" glass dish.  Top with house seasoning.  Bake for 30 minutes or until tender.  Combine Spaghetti Sauce and re-hydrated ground beef then pour over veggies.  Top with re-hydrated cheese and bake uncovered for 10 minutes or until cheese is melted.

Summer Squash Casserole

Even after canning all day I still ended up with a load of Squash & Zucchini.  I decided to make my delicious Squash Casserole.  This is a very easy recipe.  It's a little time consuming cutting up all of the ingredients but it is well worth the work and the leftovers taste great.

I cut my squash and zucchini into half inch to one inch squares

Garlic Onions

While I am busy cutting my veggies I start browning the onions and garlic.  By this time 
the house is already starting to smell great!

Awesome Squash Casserole

Once everything is browned I add sour cream, salt and pepper.  I mix it in the
same dish that I baked the casserole in.  No need to dirty up extra bowls!


I then top the casserole with crushed croutons and a little bit of extra cheese.


Bake on 350 for 20 minutes and enjoy!!


Ingredients:
2 Tbs Olive Oil
8 Cups Diced Squash & Zucchini
1/2 Vidalia Onion Diced
4 Garlic Cloves Minced
2/3 Cup Sour Cream
1 Cup Crushed Croutons 
Salt & Pepper To Taste 


Preheat oven to 350 degrees.  Brown onions and garlic in a small pan, set aside.  Cook squash and zucchini in a skillet on medium high heat until veggies are tender and starting to brown.  Once cooked combine squash and zucchini with your onions and garlic.  Mix in the cheese, sour cream and salt & pepper.  Top with croutons and bake for 20 minutes.
