National Severe Weather Preparedness Week

This week is National Severe Weather Preparedness Week. has great tips and reminders to help you and your family be aware and prepared!

Today's highlight is on building a kit that will last for at least 72 hours.  There are several ways to go about your kit.  If you are short on time or unsure where to start you can purchase a pre packaged kit that will have the necessities needed in an emergency.  You can also create your own kit tailored to your individual needs.  Building your own kit allows you to have a larger supply and items that you and your family will enjoy eating.

So whether you opt for the basic essentials of a pre packaged 72 hour kit or build a customized kit, you will enjoy the peace of mind knowing that you have prepared for your family.

White Chicken Chili with Freeze Dried Chicken

 With this cold snap I thought tonight was a perfect time to enjoy a warm bowl of chili.  This is one of my favorite dinners and it is super easy to make.  I used canned beans and sour cream that I had on hand although you can substitute with Shelf Reliance THRIVE Small White Navy Beans, Sour Cream Powder and Freeze Dried Green Chili Peppers!

I usually cook this in a crock pot, tonight being a 
work night, I just heated the chili on the stove.

White Chicken Chili Shelf Reliance Freeze Dried Chicken

2 10 Ounce Cans Great Northern Beans Drained
1 10 Ounce Can Rotel Fiesta/Mexican Tomatoes 
1/2 Cup Sour Cream
1 Package McCormick White Chicken Chili Seasoning
1/2 Cup Water

Combine ingredients in a large sauce pan or crock pot.  Add just enough water to cover ingredients.  Cook on medium heat for 30 minutes or on low for 1-2 hours.

Freeze Dried Honey Almond Chicken Salad

 While browsing the internet I came across a mouthwatering picture of a mayonnaise free chicken salad that I just had to try. I used my Shelf Reliance Freeze Dried Chicken & Celery and it was awesome!! I think the next time I try this recipe I will go lighter on the Dijon or maybe eliminate it all 
together for a sweeter salad.

I love the flavor that the Greek yogurt added and the almonds were insanely good!

Using freeze dried ingredients along with fresh ingredients is easy and saves so much time and money.
You would never guess that they were freeze dried!

Freeze Dried Honey Almond Chicken Salad

I added a little garlic to the dish.  It wasn't as sweet as I had anticipated
and the garlic brought out a nice flavor.

This was a great lunch and we used the leftovers for dinner. 
I toasted a few slices of bread and melted a little sharp cheddar
over top of the chicken salad.....yummy!


3/4 cup red grape halves
1/3 cup honey-roasted almonds, chopped
For the dressing:
1/4 cup plain Greek yogurt
1-1/2 teaspoons honey
1-1/2 teaspoons Dijon mustard
salt & pepper

Mix re-hydrated chicken and celery with grapes and dressing.  Refrigerate for 20 minutes
before serving.

Cheesy Rice With Beef

A few months ago I was trying to figure out what to cook for dinner. I decided to make
something with what I had on hand and my Cheesy Rice With Beef dish was born. I have
since made this meal several times and just now got around to writing down a recipe to share.  
This is a great recipe that could made using 100% THRIVE food storage ingredients!!

1 1/2 Cups THRIVE Instant White Rice
1/3 Cup THRIVE Freeze Dried Ground Beef
1 1/2 Cups Water
1 Tbs THRIVE Red & Green Bell Peppers
1/2 Cup Shredded Cheddar Cheese
1/4 Cup Milk
1/4 Cup Sour Cream

In a medium sauce pan bring rice and water to a boil. Boil for 3-5 minutes stirring frequently.
Meanwhile cover ground beef and peppers in boiling water. Once rice is cooked add to a mixing
bowl with the drained beef and pepper mixture. Add cheese, milk & sour cream then transfer to
a greased baking dish. Bake on 350 for 20 minutes.

Custom Longbow

I know that this isn’t technically related to food storage or emergency supplies
but I wanted to share a few pictures of my Husband’s latest bow.  This custom self
bow was made from a solid piece of Winged Elm.  The tips are carved whitetail deer
antlers.  The leather grip and bow string along with arrows were all handmade by my
dear Hubby!
