Macaroon Brownies with THRIVE food storage

Our family game night was just around the corner and I forgot that I had signed up to bring a dessert!  Luckily I had THRIVE brownies and macaroons in my pantry.  With THRIVE deserts all you need to add is water!  How much easier can it get?

I decided to combine these two treats to make an awesome brownie with macaroon filling.  They were a big hit!

After layering the macaroons over the brownie mix I added a few semi sweet 
chocolate chips....you can't have too much chocolate.

Macaroon Brownies with THRIVE food storage

Ingredients:
1 1/4 Cups Hot Water
1/4 Cup of Chocolate Chips

Preheat oven to 350 degrees and grease an 8" square glass baking dish.  In a large bowl mix together brownie mix and 10 Tbs hot water together with a whisk until blended.  Let sit 15 minutes.  In another bowl mix together macaroon mix and 5 Tbs of hot water.  Let sit for 5 minutes.  Layer half of the brownie mix in the greased dish, cover with macaroon mix and chocolate chips then top with remaining brownie mix.  Bake uncovered for 30 minutes or unit a toothpick inserted in the middle comes out clean.

Mini Pancake Muffins With Cream Cheese Filling


I have been trying out recipes with THRIVE 6 Grain Pancake mix and am in love with it!  The taste is so rich and beats any pancake mix I have used in the past.  I made these little muffins in no time and they were delicious!

Food Storage Recipe
Ingredients:
1/3 Cup Water
1-2 Oz Cream Cheese
1/4 Cup Blueberry Syrup

Preheat oven to 350 degrees.  Spray 12 mini muffin tins with non stick cooking spray.  Mix together pancake mix and water until blended.  Pour pancake mixture into the muffin tins filling them 1/3 of the way up.  Pinch off small pieces cream cheese and drop one piece into each muffin tin.  Pour the remaining mix on top of each tin filling the cups 3/4 of the way full.  Bake 15-20 minutes or until lightly golden brown.  While your muffins are baking pour cold water over the blueberries for 5 minutes to re-hydrate then drain.  Top muffins with blueberries and syrup and enjoy!

Manicotti with Freeze Dried Sausage & Spinach

This was my first try at making manicotti and I was surprised at how quick and easy it was to make.  This would also work great as a lasagna.  I used THRIVE freeze dried sausage crumbles, chopped onions and chopped spinach.

I love cooking with my TRHIVE ingredients, it makes life so much easier.  I re-hydrate my ingredients in the same bowl to save time and reduce the number of dirty dishes. Before I made the dish I did a little searching on the internet to figure out just how to stuff the noodles.  I ended up taking a large zip lock baggie and filling it with the cheese mixture.  I cut a small hole in the corner and used it like an icing bag.  It ended up working great.  One thing I did learn is that overcooking the noodles is not a good thing.  It made my noodles split under the pressure of filling them up.  Although they tasted the same it didn’t have the perfect presentation I was aiming for.  I served the dish with mini sandwich thins topped with garlic, spaghetti sauce and mozzarella cheese.

Ingredients:
1 1/4 Cup THRIVE Freeze Dried Sausage Crumbles
1 Cup THRIVE Freeze Dried Chopped Spinach
2 Tb TRHIVE Freeze Dried Chopped Onions
10 Manicotti Shells
3/4 Cup Shredded Parmesan Cheese
3/4 Cup Shredded Mozzarella Cheese
2 Cup Ricotta Cheese
2 Cup Spaghetti Sauce


Preheat oven to 350.  Combine Sausage, Onions & Spinach in a large bowl and cover with boiling water.  In a large sauce pan cook manicotti shells according to package directions, make sure not to over cook.  Once your sausage mixture is re-hydrated, drain and mix with the parmesan and ricotta cheeses.  Add this mixture to a large plastic bag and cut a small hole in one corner.  Spray a glass 9 x 11 baking dish with nonstick spray and add a few spoon fulls of spaghetti sauce to the bottom of the dish.  Use the baggie to fill each shell with the sausage and cheese mixture and lay shells in baking dish.  Top shells with spaghetti sauce and mozzarella cheese.  Bake covered for 15 minutes and uncovered for 15 minutes.

Dog the Chicken

This is Dog, our Buff Orpington hen.  We call her dog because, well, she acts more like a dog than a chicken.  In addition to our chickens we have two cats and three dogs.  Dog loves to hangout on the carport with Lady, our Beagle, Nellie, our Chocolate Lab, and Holly our Walker Coon Hound waiting for treats.  She even sleeps outside with the dogs instead of in the coup 
with her feathered friends.

We brought her inside tonight or a little treat.

THRIVE Cheddar Broccoli Rice

Lately I have been obsessed with broccoli.  I tend to pick one type of food and cook with it until I have worn it out.  I can eat the same thing for every meal of the day. Here is one of the broccoli dishes that I have been cooking lately.  I used the new Shelf Reliance Freeze Dried Chicken Slices to go along with the casserole and they were great.  I re-hydrated them and quickly sauteed them with red pepper, basil and oregano.

Ingredients:
2 Cups THRIVE Freeze Dried Broccoli
2 Cups THRIVE Instant Rice
4 Cups Water
2 Tbs THRIVE Freeze Dried Chopped Onion
9 Tbs THRIVE Powdered Milk
1 1/2 Cups Water
1/2 Cup THRIVE Shredded Cheese 
1/4 Cup THRIVE Shredded Cheese re-hydrated for topping
1/2 t Salt
1/2 t Pepper
1 Tbs Butter

Preheat oven to 350. Grease an 8” square casserole dish.  Pour 2 cups of boiling water over broccoli & onions to re-hydrate.  Meanwhile boil 2 cups of water in a medium saucepan then add rice & butter.  Cook for 3-5 minutes stirring occasionally. In a small mixing bowl mix the powdered milk with 1 1/2 cups of water (this is a replacement for one can of evaporated milk).  Once the rice is cooked transfer to a large mixing bowl.  Add the salt, pepper, milk, drained broccoli, onions and dry cheese.  Mix well and pour into greased casserole dish.  Bake uncovered for 20 minutes, remove from oven and top with re-hydrated cheese, bake for an additional 10 minutes.

Grit Casserole

One of the reasons that I love this recipe is that it can be made using 100% dry food storage ingredients.  This is a great dish to make on Sunday because the leftovers offer a quick breakfast on a busy work day.  Cooking the grits with chicken bullion makes the casserole extra yummy!

Since it was the weekend we had the full breakfast feast.  Wild boar sausage and fresh biscuits…..yum!!!!!!
Wild Boar Sauasage
                                  This is my food storage version of Paula Deen’s recipe               
Ingredients:
3 Cup Water
1 Cup Quick
1 t Salt
1/4 t Garlic Powder
1/2 t Pepper


Preheat oven to 350 and grease a casserole dish or 8” square glass 
dish. Re-hydrate the eggs, milk, cheese and butter powder according 
to the package directions. Boil water then add bouillon, mix then add quick 
grits. Cook grits for 3-5 minutes stirring frequently. Remove grits from
the stove and pour into a large mixing bowl.  Combine re-hydrated milk, 
butter and eggs in a small bowl then slowly add the mixture to the grits
until blended in.  Mix in mozzarella cheese and salt pepper and garlic. 
Pour mixture into your preheated baking dish.  Bake uncovered for
50 minutes or until set.  Top with cheddar cheese and bake an additional
5-10 minutes.
